If you plan on cooking for the entire family, you’re going to need some cooking oil, one large diced red pepper, two cups of roasted potatoes, arugula (only if you like), bacon according to preferences, 8-10 large eggs whisked and combined, half a cup of parmesan, and an additional cup of your favorite cheese (we suggest mozzarella because it melts faster).

 

 

Put the cooking oil in a nonstick pan and heat at medium-high heat. Add the red pepper and cook for a couple of minutes, then add the potatoes and cook them for two more minutes. Combine with the arugula and bacon and stir together.

Take a bowl and add the parmesan, eggs, salt, and pepper. Pour the mixture into a pan and cook it until soft. Add the cheese and then cook to medium for another minute, until reaching the desired type of crust. Transfer the pan into the oven and bake for ten more minutes at 375 degrees Fahrenheit.

Remove the frittata from the oven and let it cool off for a few minutes. Using a 3-inch kitchen ring, cut out rounds in the frittata. Sprinkle some cooking oil in the waffle iron and place rounds in it and heat until warm enough to eat.

 

Chicken, broccoli, and Cheddar potato waffles
