Chicken is probably one of the most versatile types of meat and can be consumed by all people, regardless of their religious beliefs. It doesn’t take too much to cook and can be integrated into a wide variety of recipes to satisfy all tastes and wishes.

If you have a busy life and little time to cook for you and your family, don’t pay a monthly subscription to your favorite takeout Chinese restaurant just yet. Just keep some shredded chicken in your refrigerator and take it out whenever you’re out of cooking ideas. The recipes below are not only delicious but will also be ready in no time and keep everyone at the table happy.

Shredded chicken pizza

It will take you a few more minutes to cook the pizza on your own than to order it from your favorite place, but we guarantee you it is worth the waiting. You can make your own dough or buy one from the supermarket. If you want an easy and fast solution, you can even use bread slices on which you add your favorite pizza ingredients.

Everyone loves pizza but if you want to turn it into a healthy snack, avoid using meat products bought from the store. You can replace pepperoni or salami with a shredded chicken breast that is low in calories and fats, making it an excellent choice for those who need to watch their weight.

For the rest of the pizza, you’ll need about three tablespoons of tomato sauce or ketchup, five tablespoons of mozzarella, one medium bell pepper chopped, a few slices of jalapeno, 4-5 cherry tomatoes chopped, and half an onion chopped.

Additionally, you can sprinkle some corn on top. Season it with salt, fresh ground pepper, and minced oregano. Put it in the preheated oven at 240 degrees Fahrenheit and let it bake for 35-45 minutes, depending on your choice of crust.

Once it is cooked, take the pizza out of the oven and let it rest for 10 minutes. Use a pair of sharp pizza scissors to cut it and ask everyone to join you for dinner.


Slow-cooked barbecued chicken tortillas

Wraps are a delicious food that can be prepared for lunch or dinner, and even put in cool and colorful adult lunch boxes and brought with you to work. Today’s recipe will require the use of a slow cooker. The ingredients are one medium deboned chicken breast, about 2 teaspoons of salt, 1 ½ teaspoon of paprika and garlic powder mixed, fresh ground pepper (depending on taste), ¼ cup brown sugar, 2 tablespoons of apple cider vinegar, 2 tablespoons of bourbon, half a cup of cola soft drink, and one sliced lemon.

Stir together the salt, pepper, paprika, and garlic powder and sprinkle the deboned chicken breast. Place the chicken breast into your slow cooker.

Mix the brown sugar with the bourbon, cola drink, and the apple cider vinegar in a small bowl. Pour the mixture on the chicken breast without removing the seasoning on top. Put the lemon slices in a layer on top of the chicken.

Cover the machine and allow it to cook for 6 hours on low speed or 5 hours on high speed. Check the process once in a while to make sure the chicken breast is done. Remove the chicken from the slow cooker and throw away the lemons. Let it sit for up to 15 minutes. Using a medium-sized, razor-sharp kitchen knife, shred the chicken in a plate.

Take one tortilla wrap and cover it with guacamole or mayo. Add the shredded chicken, pickled peppers, onions, and cherry tomatoes in the wrap. Garnish with fresh cilantro, salt, and pepper. Serve while the chicken meat is still warm or refrigerate and eat it the next day.


Quinoa Pilaf with shredded chicken

A delicious recipe that is healthy and easy to make, this quinoa pilaf with shredded chicken will certainly help you bring all your family together around the dinner table.

You are going to need 2 tablespoons of coconut oil, one small onion diced, one small celery diced, three medium carrots diced, one cup of quinoa, about two cups of chicken or veggie broth, one tablespoon of seasoning of your choice (we prefer Mediterranean or Italian seasoning), some chopped fresh sage, one cup of shredded cooked chicken meat, and salt and pepper to taste.

Put the coconut oil in a saucepan and heat it. Add the onion, the carrots, and the celery and cook for about seven minutes until tender. Add the quinoa seeds, the seasoning, the broth, and the fresh sage. Bring to a boil at high heat and reduce the heat to medium-low after. Cover the pan and simmer until the juices are absorbed and the quinoa is tender (approx. 20 minutes).

Add the shredded chicken meat and season with salt and fresh ground pepper to taste. Voila! In around 45 minutes you’ll have a delicious dinner to share with your friends or family.

Spicy rice noodle salad

For those of you who are fans of the Asian cuisine, we suggest this simple and tasty recipe. You are going to need a small package of rice noodles, three cloves of garlic minced, ⅓ cup of seasoned rice vinegar, Asian chili paste to taste, salt and pepper to taste, one teaspoon of brown sugar, fresh mint and cilantro to taste, one cup of carrots cut, half a cup of chopped peanuts, 4 green onions chopped, some sesame oil, and 4-5 grilled boneless, skinless chicken thighs.

Put the noodles in a large bowl and cover them with hot water. Stir and soak for around 15 minutes. Drain and rinse with cold water.

Add the rice vinegar, chili paste, the garlic, the brown sugar, and salt in a bowl. Stir in the onions, the carrots, mint, and cilantro to taste, then toss in the rice noodles and sprinkle them with sesame oil and peanuts. Allow the salad to sit for around 30 minutes. Add the remaining peanuts and the shredded chicken meat. Season with pepper and salt and serve while warm.
